TWIST EATS (and drinks!): Skinny Coconut Margaritas
Last week, I was planning a little birthday cocktail party for my fabulous sister-in-law, Suzi, and came across this recipe for “Skinny Coconut Margaritas“. I love a spin on the traditional ‘rita and was intrigued by the relative healthfulness of this yogi-esque concoction. It’s easy, refreshing, and I already had all the ingredients. BAM!
I mixed up a big batch in a pitcher (multiplied the recipe by 4) and was ready to pour when guests arrived.
INGREDIENTS:
(serves 2, or one after a hard day)
3 ounces lite coconut milk (from the can)
3 ounces tequila blanco
1 ½ ounces triple sec
8 ounces coconut water
Fresh lime wedge, to serve
DIRECTIONS:
- In a shaker (or a pitcher and stir), combine the coconut milk, tequila blanco, triple sec and coconut water.
- Shake/mix until combined.
- Pour into cocktail glasses with ice.
- Serve with a lime wedge.
- Toast away!
